Multi-grain Veggie Pizza


Ingredients

2 cups whole wheat flour
1/2 cup all purpose flour/maida
1/4 cup ragi flour
1/4 cup instant oats
2-3 tbsp crushed nuts ( I used roasted and crushed almonds and pistachios)
1 tsp pizza seasoning
1/2 tsp red chilli flakes
Salt to taste
1 cup warm milk
1/2 tsp sugar
2 tsp instant yeast
Olive oil as required

For toppings
2 onions 
2 tomatoes
1 bell pepper/capsicum
10-15 mushrooms
A few baby spinach leaves
A few sun-dried tomatoes
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 cup pizza sauce

Method
Add sugar and yeast to warm milk. Wait for a few minutes till the yeast is active and frothy.


Add all the dry ingredients, pizza seasoning, chilli flakes and salt to a bowl.
Add the activated yeast mixture and knead into a soft and sticky dough. Knead the dough for a few minutes.
Drizzle with some olive oil and keep it in a warm place till the dough doubles.
Once the dough doubles, punch out the air and knead again.
Cover and let the dough rest again until it rises.
Once it rises again, knead the dough and divide into 2 equal portions.
Slice the onions, tomatoes, mushrooms and capsicum.
Roll out the dough to form a pizza base and place it onto a baking tray.
Spoon some pizza sauce onto the dough and spread it out evenly onto the pizza base.
Top with the veggies.
Sprinkle the shredded cheese on top of the veggies.
Bake in a 200°c pre-heated oven for 20-30 minutes until the cheese has melted.
Cut into slices.
