Slit Mulakku Bhajji
Every time I make Mullaku bhaji at home, our mouths are on fire. So time I tried to do it a little differently. That's the recipe that I am sharing today.
Ingredients
8 - 10 Bhajji Mulakku (slit through the middle and deseeded)
For the batter
1 cup chickpea flour
2 tablespoons rice flour
2 tablespoons rice flakes (beaten rice)
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon hing
Salt to taste
1 big onion finely chopped
A handful of chopped coriander leaves
A few curry leaves
Water to make a thick batter
Oil for frying
Method
In a bowl mix together chickpea flour, rice flour, rice flakes, spices and salt.
Add enough water to make a thick batter.
Mix in the chopped onions, coriander leaves and curry leaves.
Dip the slit and deseeded chillies in the batter and fry in hot oil until golden brown.
Note: Completely slitting and deseeding the chillies reduced the spice level of the dish. The insides of the chillies also got coated well with the batter.
Adding the onions and herbs also cuts back on the spices and adds more flavour.

Masala Egg Buns
Ingredients
1 cup whole wheat flour
1 cup all purpose flour/maida
1/2 - 1 cup warm milk
1/2 tsp sugar
1 tbsp yeast
Salt and Pepper to taste
For the stuffing
5 boiled eggs (shelled and cut into halves)
2 big red onions (chopped)
1 tsp ginger garlic paste
1 tsp green chilli paste
1 big tomato (finely chopped)
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp egg masala
A small bunch of curry leaves
3-4 tbsp milk
Salt to taste
2-3 tsp oil
Method
Add yeast and sugar to warm milk and wait till the yeast is activated and frothy. This will take about 10-15 minutes.
Add wheat flour, maida, salt and pepper to a bowl. Mix well.
Add the activated yeast mixture to the dry mixture and mix well to form a dough. Knead the dough for about 5 minutes.
Cover the dough and let it rest for 45 minutes to 1 hr.
Meanwhile, prepare the stuffing.
Heat oil in a pan. Saute chopped onions until translucent. Add ginger-garlic-green chilli paste and curry leaves. Cook this for a few minutes. Add dry spices and saute for a couple of minutes. Add chopped tomatoes, cover and cook till the oil separates from the masala. Add the milk, cook for a minute on low heat and turn off the heat. Add salt to taste.
Add boiled eggs (shelled and cut into halves)
Let it cool to room temperature.
Once the dough doubles in size, punch out the air.
Divide the dough into equal lemon sized balls. Flattened the dough balls on the palm of your hand.
Add the egg masala in the centre and wrap the dough around it to form a bun.
Place the sealed side down in a baking pan. Cover and keep in a warm place till the buns have risen. Brush with some oil.
Bake in 200°c preheated oven for 25-30 minutes until golden brown.
Serve hot with ketchup.

Egg & Cheese Pizza
I wanted to make something different for the kids after - school...They wanted Maggi, but I wanted to give them a tasty..healthier option.
I suggested Pizza...which they both love...but they end up getting rid of half the veggies in their pizza...
So, this is wht I came up with...eggs, finely chopped veggies (carrots, onions, tomatoes & bell peppers...would have loved to add mushrooms too...didnt hv any in stock ..)
The intention was to make an omlette...but instead it turned into a scrambled egg with veggies ...
Then with the usual the usual recipe for pizza...substituting with the scrambled egg instead of regular chopped veggies...topped with mozzarella cheese & a small sprinkling of italian herbs...
Baked in the oven for 20-25 mins...
Egg & Cheese Pizza...loaded with eggs, veggies & cheese...
Nutritious & filling

Nutritious & filling
The best part...is the compliment from my little one..."Amma...its soo tasty...I love your cooking...u make things taste soo gud"
