Happy Mother's Day - Triple Chocolate Icecream

For Mother's Day I decided to make something special....what better than icecream to please the kids??
My recipe is really simple...something that I have used before to make other flavors of icecream...but just with a little twist...Hope you enjoy it too...& to all my wonderful blogger moms out there - HAPPY MOTHER'S DAY!!!!

Ingredients

1 pkt chocolate pudding mix
1 small tin of sweetened condensed milk
1 container of Cool Whip sweetened whipped topping
1 cup chocolate chips
1 cup chocolate fudge topping (recipe below)

Method


Recipe for chocolate fudge topping:  Boil together 1 cup whole milk with 2 tbsp corn syrup. When it begins to boil, turn off the heat. Add 1 bar of chopped baking chocolate & butter. Stir well till it melts. Refrigerate till required.

Prepare the pudding using cold milk according to the directions on the package & chill for 5-10 mins.

To the prepared chocolate pudding, add the condensed milk & whip with an electric beater for 2-3 mins.

Add the whipped topping & fold in carefully. Then fold in the chocolate chips.

Finally drizzle the chilled fudge topping & swirl it in without completely blending it into the icrecream.

Chill for 5-6 hrs before serving. Drizzle with some more fudge topping before serving.
