Ingredients
1 cup Basmati Rice
3-4 cloves garlic (crushed or chopped)
2-3 green chillies (chopped)
1/4 cup(packed) cilantro leaves

1/2 cup (packed)mint leaves1/4 cup shredded coconut
1 tsp garam masala powder
Ghee (as required)
a handful of fried cashews
Salt to taste
Method
Cook 1 cup Basmati rice with 2 cups of water. Fluff up the cooked rice with a fork to get separate grains. Set aside.
Remove the stems from the herbs, clean well & set aside.
In a pan, heat 1 tsp ghee, add garlic & green chillies. Saute for a few mins. Add shredded coconut & saute till light golden. Add garam masala powder & the herbs. Saute till the leaves are wilted.
Cool this mixture & grind to a smooth paste.
Saute the ground paste for a few mins. Add the cooked rice & mix well. Sprinkle a little water if required & add salt to taste. Saute for a few more mins.
Garnish with fried cashews.
Serve hot with yoghurt.
