Ingredients
1 1/2 cups whole wheat flour
1/2 cup all purpose flour
1/2 cup carrots (grated)
1/2 cup chopped spinach
1/4 cup grated parmesan cheese
1/4 cup grated mozarella cheese
salt & pepper to taste
1/2 tsp dried parsley leaves
1/2 tsp oregano
1/2 tsp yeast dissolved in warm water
Method
Mix together all the dry ingredients. Then mix the cheese in. Knead to a dough adding the yeast dissolved in water. Add extra water to knead,if required.
Cover the dough with a moist cloth & let it rise for a minimum of 3-4 hours.
Bake in a greased loaf pan in a 425F pre-heated oven for 25-30 mins. Smear some butter on the dough before baking to prevent it from cracking or getting too dry.
Serve warm for breakfast or with tea.
