Vegetable Biriyani
Ingredients
1 cup Basmati Rice ( soak in water for 1/2 hr)
1/2 cup chopped veggies (carrots, french beans & peas)
1 finely chopped onion
1tsp Ginger-Garlic paste
1 tsp red chilli powder
1/2 tsp garam masala powder
2-3 green chillies ( slit in the middle)
1 small tomato(chopped)
1 cup Coconut Milk
a small bunch of coriander(cilantro) leaves & pudina(mint) leaves finely chopped
2 tbsp Ghee
Salt to taste
Method
Heat ghee in a pan, add the chopped onions, ginger-garlic paste & green chillies & saute till it turns golden brown. Add the chopped veggies, red chilli powder & garam masala & saute for a few mins. When sauteed, add the rice & fry for 2-3 mins.
Pour in 1 cup coconut milk & 1 cup water. when the water comes to a boil, add chopped tomatoes,mint & cilantro leaves & salt to taste.
Cover & cook on a simmer till the rice is done.
Serve hot with raita.
