Lets start by making berry preserves.
Cook together 1 cup each of strawberries, raspberries & blueberries together with 1 tsp orange zest & sugar. Cook till the fruit is mushy (dont completely mash the fruits). Cook for another 10-15mins & turn off the heat. Dont let it thicken completely.
For the Cheesecake
1 cup vanilla cream sandwich cookie crumbs
1 tbsp butter
1 1/2 pkt(10oz) cream cheese @ room temp
3/4 cup sugar
1 tsp vanilla extract
2 tbsp sour cream
1 cup previously prepared berry preserves
Mix together cookie crumbs & butter. Press firmly to the bottom of the cake pan to form the crust.
Beat together cream cheese, eggs, sugar & vanilla extract till creamy. Beat in sour cream.
Pour half the creamcheese mixture over the crust. Spoon the berry preserves onto the creamcheese mixture. Top with the remaining cream cheese mixture.
Bake in a preheated 300F oven for 1 hr.
After 1 hr, remove from the oven & cool completely. Chill & top with berry preserves before serving.
