Malai Subzi (Mixed Vegetables in a creamy gravy)


1/2 cup sliced mushrooms

1/2 cup chopped carrots & peas 1 large onion finely chopped

1 tsp ginger-garlic paste

1/4 cup tomato puree

1 tsp red chilli powder

1 tsp garam masala powder

2 tbsp cashew paste ( cashews soaked in water for 10-15 mins & ground to a fine paste)

2 tbsp fresh cream

a bunch of cilantro finely chopped

2 tsp oil

salt to taste


Heat oil in a pan & saute the chopped onions till golden brown. Add ginger-garlic paste & saute for a min. Add tomato puree, chilli powder & garam masala & cook till the oil separates from the masala.

Add the vegetables, cover & cook on simmer till the vegetables are cooked. Add the cashew paste & stir well. Cook for a few mins.

Turn off heat & add fresh cream & mix well.

Garnish with finely chopped cilantro.

Serve hot with chappathi/paratha.
