Eggless Carrot Raisin Muffins


1 cup all purpose flour
1 cup whole wheat flour
1/2 cup sugar
1/2 cup milk
1 banana (mashed)
1 tsp baking powder
2 tbsp butter
2 cups shredded carrot
a handful of raisins


Sift together flour (wheat & all pupose) with baking powder. Add sugar & mix well.

Mix together mashed banana, milk & butter in a different bowl. Then, mix the wet ingredients with the dry ingredients.

Fold in the shredded carrots & raisins. (Raisins should be dusted with flour before adding them to the batter to prevent them from sinking to the bottom of the muffin while being baked)

Pour 2/3rds into buttered muffin pans & bake in 350F pre-heated oven for 18-20 mins.

Serve warm for breakfast or at snack time.
