This recipe is an entry to Veggieplatter's Baking from a Book Event. I have a made a few changes to the original recipe starting from the name which is really "Raspberry Bars"
Ingredients
1/2 cup butter (softened)
1 cup packed brown sugar
1 1/2 cups all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1 1/2 cups quick cooking rolled oats
1/2 cup evaporated milk
1/2 cup strawberry jam
Method
Cream butter & sugar together till fluffy. Stir together flour,salt, soda into the creamed mixture. Add oats & 1/4 cup evaporated milk (the original recipe calls for water) & mix till crumbly.
Firmly pat half the mixture into a greased baking pan. Stir the remaining evaporated milk(original recipe-lemon juice) into the jam & spread over the base. Sprinkle with the remaining crumb mixture.
Bake at 350F for 25 mins.
Cool & cut into bars.
