Ela Ada

Ela Ada is a tea-time snack made in kerala. It is a dumpling filled with jaggery,coconut, mashed banana/jackfruit.These dumplings r steam cooked wrapped in banana leaves. It is very simple & delicious.
I had been trying to find banana leaves, cldnt find them at any of the Indian stores. I finally found some at the frozen section at ShopRite. When thawed these are as good as the fresh banana leaves.
Ingredients
1 cup rice flour

1/2 cup jaggery

1/4 grated coconut

1-2 bananas mashed into bite size pieces(do not mash to a paste)

5-6 banana leaves

Method
Jaggery Filling
In a pan add jaggery & a few tbsps of water. Cook on low heat till the jaggery melts. Add grated coconut & mashed banana & cook till the jaggery gets thick. Turn off heat & set aside.
Add water to the rice flour to form a batter as thick as dosa batter.

Heat a dosa tawa & place the banana leaf on it. Flip when one side starts to change color. Let it stay on the tawa for just 2-3mins. This is done so that the leaf does not tear when it is being folded.


Pour one spoonful of batter on the banana leaf & spread it with the back of the spoon. Place 1-2 spoonful of the jaggery mixture in the middle.

Fold the leaf very carefully & place on a idli stand.


Steam cook for 10-15 mins.

Remove from steamer &



Serve with tea.
