1/2 - 3/4 cup broken wheat (dalia)
1 small red onion finely chopped
1 green chilli (slit in the middle)
1/2 cup of chopped veggies
1 tsp mustard seeds
a handful of curry leaves
a handful of chopped cilantro
salt to taste
2 tsp oil
Take the broken wheat in a microwavable bowl & add double the water. Microwave of HIGH for 3-4 mins.
After that, cover the bowl & set aside. This way, the broken wheat will be partially cooked in a few mins.
Meanwhile, heat oil in a pan. Add mustard seeds, green chilli & curry leaves. When they splutter, add the chopped onion. Saute for a few mins till it is transparent. Now, add the veggies, 1/4 cup of water. Cover & cook on simmer till the veggies are tender.
Now add the partially cooked broken wheat to the pan. Add salt & chopped cilantro. Cook for a few mins till the water in the pan evaporates & the mixture has thickened.
This is a healthy lunch box recipe for kids. Transfer this into a thermos lunch box which will keep the lunch warm.
