Cookies N Creme...Icecream Cake

Having tasted icecream cake at a b'day party...I wanted to try making one myself...This is my first attempt @ one...It wasnt too hard to put together & turned out really nice...


Ingredients

For homemade icecream

1 (14oz) can of condensed milk
2 cups heavy cream
1 pkt unflavored gelatin
1 tsp vanilla extract
&
1/2 pkt Oreo cookies (roughly chopped)

For the chocolate cake

2 cups cake flour
1 cup of cocoa powder
3/4 cup sugar
1/2 cup butter (softened)
1 tsp baking powder
2 eggs
3/4 cup water

1 small tub Whipped Topping for decorating...

Lets start with the icecream first...

Prepare the gelatin according to the instructions on the package but do not allow it to set completely.

Combine together condensed milk, heavy cream & vanilla extract in a large bowl. Blend in the prepared gelatin before it sets completely. Beat this mixture well with an electric hand blender till it is frothy & creamy.
Freeze this mixture for 3-4 hrs.

After partial freezing, remove from the freezer & beat the mixture again with the electric blenader.
Repeat this process for 3 times till the icecream has a creamier texture. When the icecream has become creamy, fold the chopped oreo cookies. Freeze overnight.

And now for the chocolate cake....

Sift cake flour, cocoa & baking powder & set aside.

In a bowl, cream together butter & sugar. Add the eggs & beat well. Then add the rest of the ingredients slowly & beat well for 2-3 mins.

Pour this mixture in a cake pan & bake in a 350F pre-heated oven for 25-28mins.

Now lets put the icecream-cake together.....

Once the cake is done, remove from the oven & cool on a cooling rack.

Slit the completely cooled cake horizontally. Remove the top.

To frost, remove the prepared icecream from the freezer & leave it at room temperature for 1/2 hr. This will make the icecream a little soft & easier to frost.

Frost the bottom part of the cake first. Spread with a handful of chopped oreo cookies.

Place the top layer of the cake & work quickly to frost the whole cake.

Freeze the cake before decorating it or the icecream will melt. After freezing the cake for 2 hrs, decorate with whipped topping & crushed oreos.
