When we think of marble cake, we usually think Vanilla & Chocolate...but I wanted to try something different, Strawberry being one of my favorite flavors, I used Strawberry instead on Chocolate & it was really good.
1 1/2 cup all purpose flour
1/2 cup sugar
1/2 tsp baking powder
1/2 cup butter (at room temp)
1/2 cup milk
7-8 ripe strawberries (pureed)
For the frosting
4 oz cream cheese (softened)
1/4 cup butter (at room temp)
1/4 cup sugar
3-4 strawberries (crushed or finely chopped)
Sift flour with baking powder. Cream together butter & sugar. Beat eggs & milk. Blend all the ingredients together.
Pour the batter into a greased baking pan. Pour the pureed strawberry & mix in a swirling pattern.
Bake in a 350F pre-heated oven for 20-25 mins.
Cream together butter,cream cheese & sugar till creamy. Fold in crushed or finely chopped strawberries.
Frost the cooled marble cake with the cream cheese mixture.
Garnish with sliced strawberries.
