Veggie Quesadilla(Mexican)

A quesadilla is a circle of uncooked corn tortilla folded in half and filled with cheese, then warmed up until the cheese has melted. However, variations include the use of wheat flour tortillas, especially in the northeast part of Mexico, which are more like cheese tacos found in the U.S.


Tortillas (wheat)

1 onion sliced

1 green pepper sliced

1 cup mushrooms sliced

1/2 cup shredded mozarella cheese

salt & pepper to taste


Saute the veggies in 1 tsp of oil for 4-5 mins

Spread the veggies, mozarella cheese, salt & pepper between 2 tortillas.
Microwave on high for 1 1/2 to 2 mins.

Serve hot.
