Bhaingan Masala ( Curried Eggplant )

Nutritional Value: Eggplant/Brinjal



Ingredients

8-10 baby eggplant

1 onion (finely chopped)

2-3 pods of garlic

3-4 dry red chillies

a handful of cashews

1 tomato (finely chopped)

a small bunch of finely chopped cilantro

1 tsp oil



Method

Shallow fry the baby eggplant & set aside.

Saute the finely chopped onions,garlic, red chillies & cashews till they turn light brown.

Add the chopped tomato & cook on simmer for 5 mins.

Turn off the heat & let the mixture cool.

Grind this mixture in a blender to a smooth fine paste.

Pour this mixture into a pan & add 1/2 cup water.

Add salt to taste & bring to a boil. When it begins to boil, turn off heat & add the fried eggplant to the gravy.

Garnish with finely chopped cilantro.
