Uluva Pulunkkari ( Kerala style gravy in a fenugreek-coconut base)





Ingredients

1 cup thinly sliced carrots


1 small onion (sliced)
1/2 tsp turmeric powder

1 tsp tamarind paste

salt to taste

For coconut paste
1/2 cup grated coconut

1/4 tsp methi seeds ( fenugreek)

3-4 dry red chillies


For seasoning
1 tsp oil

1 tsp mustard

2-3 red chillies

a few curry leaves
Method

Cook together the first 2 ingredients with turmeric powder & set aside.
Roast the methi seeds & red chillies in a pan with 1/4 tsp of oil. Add this to the grated coconut & grind to a fine paste.

Add this paste to the cooked vegetables & bring to a boil. Add the tamarind paste & continue to cook for a few minutes. Add salt to taste & turn off the heat.
To season, heat a tsp of oil in a pan & add the mustard. After the mustard splutters, add the red chilli & curry leaves & fry for 1-2 mins. Turn off heat & season the gravy with this mixture.
